A mixture used to stabilize and flavor light creams for modern confectionery products.
Ingredients: sugar, dextrose, gelatin, lactose (milk), thickener E417
Use: 500 g Zeesan Neutral, 625 g water (approx. 25°C), 2500 g whipped cream.
Mix Zeesan with water, add 1/4 of whipped cream and beat with a whisk until smooth. Add the remaining whipped cream and gently mix with a spatula.
