Pectin E 440i in powder is a strong, natural, gelling agent, obtained from citrus peel, modified with grape sugar (dextrose). It is not intended for direct consumption on its own.
Use: The product is intended for professional use only. It is intended for confectionery production - especially for the production of gelatin candies and is an excellent natural thickener for the production of jams and marmalades.
Dosage: Approximately 0.5% for jams and 1.4% - 1.6% for pectin gel. Before adding to the fruit mixture, we recommend dissolving the pectin in hot water (70°C), or mixing 1 part pectin with 2 parts sugar and adding it to the fruit mixture when it reaches at least a temperature of 70°C. The optimal use of the product depends on the pH of the processed fruit and therefore it is recommended to test the effect on a small amount.
