Perfecta is a powder preparation for cold pastry cream production. It contains a high proportion of whole and semi-fat milk, and thus enables the preparation of pastry cream of refined taste with a smooth and velvety surface. The preparation has universal use, it is resistant to baking and freezing.
Method of use

- water 1000 g
The dosage of Perfecta can be reduced up to 350 g in order to prepare a finer cream. If we want to prepare a cream with an intense milk taste, we replace the water with milk, which we heat to room temperature (15-25 °C). The dosage is as follows:
- Perfecta 350-400 g
- milk 1000 g
Mix Perfecta in water (or milk), whisk vigorously and leave to rest for 3 minutes. Then we mix again until we reach a homogeneous mixture of creamy consistency. Perfecta contains a high proportion of milk. We use perfectly clean kitchen containers and utensils to avoid any contamination of the preparation. We always prepare only the amount of product that we will use immediately. We store the cream in the refrigerator.
