Spooky Lemon Cookies

The year has come to a close and we have autumn time again, and with it, Halloween, cursed by some and loved by others, is approaching. It is referred to as an American holiday, but it is not. Although it is celebrated mainly in Anglo-Saxon countries, it is originally a Celtic holiday that is celebrated on October 31. It precedes the Christian holiday of All Saints. That is why it was also called All Saints' Eve. The Celts saw this day as the time when the boundaries between the worlds of the living and the dead disappear. People dressed in masks to protect them from evil spirits. Whether you are a fan of this holiday or not, you can bake delicious lemon cookies with any theme.

Dough procedure:

  • 170 g plain flour
  • 80 g of powdered sugar
  • 1 egg
  • 100 g of butter
  • 1 tablespoon of lemon juice
  • rind from one chemically untreated lemon

We quickly work all the ingredients into a smooth dough, wrap it in cling film and let it harden in the fridge.

After about an hour, heat the oven to 180°C. Divide the dough into 4 parts and gradually roll out into a sheet of approx. 3 mm. We cut out the individual shapes, put them on a baking sheet lined with baking paper and bake until soft pink. The oven needs to be watched.

Let the baked cookies cool down and spread with your favorite marmalade.
