Decorative isomalt sugar in pearls for creating cast, modelled, drawn or blown edible caramel decorations.
If the production process is followed, an unmistakable shiny glass effect is created. Can be dissolved without adding water. After melting, it can be colored (preferably with gel colors) and flavored with fruit pastes, or the finished decoration can be colored with spray or powder paints.
Once processed isomalt can be melted again. To prevent it from becoming brittle due to the loss of internal moisture, it is enough to add a few drops of water.
Use: Dissolve the isomalt beads in a saucepan until all air bubbles disappear without adding water or other ingredients. We cool the container with dissolved isomalt in a cold bath, while adding approx. 10 ml of water to 1 kg of isomalt, which we can color at this stage. After it has cooled, we pour the mass onto the modeling silicone mat and we can start modeling under the lamp. Once completely dissolved pearls can be reheated repeatedly. However, if we heat the material too often, for too long, or at temperatures above +150°C, the product will become significantly more fragile. We therefore recommend adding a few drops of water when reheating.
