Callebaut® cocoa butter is pressed from a first-class measure of whole roasted cocoa beans. It is 100% pure and has a neutral taste and color. It is a remarkable base for creating color mixtures for the spray gun. It is also an excellent ingredient for adjusting the fluidity of your chocolate. Add anywhere from 1 to 8% cocoa butter to the total volume of your chocolate to create a slightly runnier chocolate that's ideal for thin to very thin molding and drizzling. It also improves the shine and refraction of your chocolate when used in molded and coated confections.
