After beating with water, use as a fresh egg white for the preparation of frosting or snow dough without the need to separate the yolks. The package corresponds to 5 fresh egg whites.
Use: To restore 1 egg white, gradually add 3 tablespoons of water to 3 g of dried egg white (1-2 teaspoons) and beat with a whisk until a smooth mixture without lumps is formed. We will use the reconstituted egg white in recipes just like the fresh one.
Snow meringues: Beat the contents of the bag with 150 ml of water thoroughly with a whisk for at least 5 minutes. Then gradually add 250 g of sugar while constantly whisking and whisk until sharp peaks form. Fill a pastry bag with solid snow and form meringues on a baking sheet lined with baking paper. Place in the oven and dry for 1.5 to 2 hours in an electric oven at 110°C or in a hot air oven at 90°C.
